
Red Curry Deviled Eggs

Deviled eggs are objectively one of the best finger foods at a party and these make a great thing even better with the help of Thai red curry paste. These red curry deviled eggs are the perfect complex bite, packed with savory, sweet, tangy, and umami flavors. This recipe can easily be doubled for a crowd.If you use red cabbage for plating like I do, note that it will dye your eggs blue. I don't mind this, but if you don't find that appetizing, green cabbage works just as well!

Ingredients
- 6 eggs
- 2 Tbsp coconut cream or coconut milk
- 1.5 Tbsp red curry paste
- 1/4 tsp sugar
- Small bunch of cilantro washed and dried
- One lime sliced into small wedges
- Crushed peanuts crispy shallots, or fried onions, for garnish
- 1/2 head of cabbage shredded, optional for serving
Instructions
- Steam your eggs: fill a 3-quart pot with about 1 inch of water and bring to a full boil on high heat. Carefully add eggs directly from fridge. Cover with a lid and set timer for 10 minutes. In the meantime, prepare an ice bath.6 eggs
- Once eggs are done cooking, immediately submerge them in the ice bath and let sit for at least five minutes.
- Carefully peel the eggs and rinse off any pieces of shell. Slice the eggs in half, then carefully remove the yolk of each half and add to a bowl.
- Add the coconut milk or cream, along with the red curry paste and sugar. Mash with either a fork or a hand mixer and mix until smooth. Taste the mixture — the taste will vary based on the curry paste you use — and add another quarter teaspoon of sugar or teaspoon of curry paste if necessary.2 Tbsp coconut cream or coconut milk, 1/4 tsp sugar, 1.5 Tbsp red curry paste
- Transfer the egg yolk mixture to a small piping bag with a large tip or just a Ziploc bag with the tip cut off.
- Pipe egg yolk mixture into each egg white half. Arrange eggs on top of shredded cabbage, if using.1/2 head of cabbage
- Garnish each egg with a sprig of cilantro and sprinkle the top with crunchy condiment of choice. Arrange lime wedges around deviled eggs. Serve immediately.Small bunch of cilantro, One lime, Crushed peanuts
